Grilled Zucchini and Tofu Roll Ups

Grilled Zucchini and Tofu Roll Ups are light, flavorful and perfect as a starter. This vegan appetizer is truly delicious and healthy. Made with strips of grilled zucchini and stuffed with marinated grilled tofu. The marinade made with basil, roasted peanuts reminds you of Thai flavors.

What better way of using the freshly grown basil from my Balcony Garden? I truly love this fresh produce and work hard for getting uninterrupted supply of  herbs like parsley, mint, coriander, basil etc.

Grilled Zucchini and Tofu Roll

This recipe is an awesome healthy vegetarian appetizer that’s sure to please everybody. It’s great for all seasons, from summer when you don’t want anything heavy, to winter when you want to balance heavy food. Whenever you serve, its sure to be hit.

Ingredients For Grilled Zucchini and Tofu Roll

3 zucchini sliced lengthwise into ¼ inch slices
300 grams firm tofu sliced lengthwise into 12 slices
Salt and pepper
Oil to grill

Marinade
Grilled Zucchini and Tofu Roll
10 cloves garlic
½ cup sun dried tomato. For recipe click here.
2 red chillies sliced
¼ cup basil
¼ cup peanuts roasted
2 tablespoon sesame oil
Salt to taste

Directions For Grilled Zucchini and Tofu Roll

  • Grind all the ingredients for marinade together in a blender to a paste. Transfer in a bowl.
  • Coat all the slices of tofu generously, cover and refrigerate to marinate for 30 to 40 minutes.
  • Discard the outermost slices of zucchini and brush the rest of the slices with the oil on both sides.
  • Heat a grilling pan; drizzle with ½ teaspoon oil and place a few slices of tofu at a time to grill. Turn and grill well on all sides.
  • Grill all the zucchini slices on each side till grill marks appear. Season with salt and pepper.
  • Now apply a little paste on each slice and place a grilled tofu.
  • Roll up and place on a platter. Repeat with the rest of the zucchini slices.
  • Serve.
