Sichuan Green Beans

Sichuan Green Beans is a spicy Chinese side dish found on the menu of most of the Chinese restaurants. This is an easy and quick dish made with few ingredients. So why wait to go to a restaurant to have them. As it is, most of the restaurants deep fry the beans making the dish oily.

This szechuan beans recipe calls for dry fried technique used in Sichuan cooking quite similar to stir fry. The beans are par boiled, stir fried on high heat until browned and lightly blistered. Then they are added to pan-fried ginger, garlic, onions and peppers. This Chinese side dish is my all-time favourite.

This dish can be made with tender string beans, haricot beans or even long beans known as yard beans also.

Ingredients For Sichuan Green Beans

Sichuan Green Beans
300 grams haricot beans
50 grams Pok Choy (also called as Bok Choy)
½ cup onion chopped fine
2 tablespoon garlic minced
1 tablespoon ginger minced
1 tablespoon red pepper minced/chilli flakes
½ teaspoon vinegar
½ teaspoon soya sauce (optional)
½ teaspoon Sichuan sauce
½ teaspoon sugar
Salt to taste
1+1 tablespoon oil

Directions For Sichuan Green Beans

  • Trim the ends of the beans and cut them into half. Blanch them for 2 to 3 minutes, pat dry on kitchen paper and set aside.
  • Heat 1 tablespoon oil in a pan, add the dried beans and saute on high heat till blisters appear. Drain and set aside.
  • Add oil in the same pan, add garlic, ginger, onions and saute for 2 minutes.
  • Add the chilli, beans, pok choy and saute on high heat.
  • Now add rest of the ingredients and saute.
  • Serve.
