Basundi

Basundi is a rich and delicious sweet dish. It is very popular in the states of Gujarat, Maharashtra and Karnataka. Basundi is generally served along with poori (deep fried bread) during the festivals like Raksha Bhandhan, Janmashtami, Navratri etc.

This is a super easy recipe that can be made effortlessly. A few simple ingredients are required with a little time on hand. Basundi is made with milk, sugar, saffron, nuts and cardamom.

This flavorful and creamy thickened milk dish can also be made with the flavors of fresh fruits like mango, pineapple etc. It is quite similar to Rabdi or Rabri.

Ingredients For Basundi

Basundi, Rabdi, Rabri

1½ liters milk
3 tablespoon sugar
Few strands saffron
½ teaspoon cardamom powder
1 tablespoon almonds chopped
1 teaspoon pista (pistachio) chopped

Directions For Basundi

  • Keep the milk to boil in a heavy bottom pan on high heat. Once it starts to boil reduce the heat and let it boil while staring occasionally.
  • Soak the saffron in 1 spoon warm milk.
  • When the milk is reduced to half add sugar and stir.
  • Continue to boil for further 5 minutes.
  • Take off the heat, add saffron, cardamom and stir. 
  • Stir with a hand blender to make it smooth and creamy. This is optional.
  • Add half of the almond and pista and mix.
  • Let it cool to room temperature.
  • Refrigerate to serve chilled.
  • Garnish with rest of the nuts.
  • If you want you can serve warm also.

Notes

  • Use of a heavy bottom pan is a must to avoid sticking of milk at the base.
  • Quantity of sugar can be adjusted according to taste.
  • Churning of the Basundi is optional.
