Healthy Millet and Veggie Burger

Healthy Millet and Veggie Burger is a fabulous alternative to the regular potato based patties. This burger is made with patties having mix of millet (foxtail millet) and vegetables. These burgers are easy to make and delicious to eat. Further the patties are pan fried on a tava (skillet) instead of deep fry.

Foxtail Millet is also known as Kangni in Hindi, Thinai in Tami, Korra in Telugu, and Navane in Kannada.

I have used fresh basil grown in my balcony but feel free to use any herb of your choice. This is a simple recipe that can be made quickly and easily. Serve with salad and ketchup by the side.

Millets are a group of highly variable small-seeded grasses, widely grown around the world as cereal crops or grains. The crop is favored due to its productivity and short growing season under dry, high-temperature conditions.

Ingredients For Healthy Millet and Veggie Burger

4 burger buns
2 onions sliced
Lettuce leaves
4 cheese slices
4 tablespoon cold slaw or mayonnaise

For the patties

Healthy Millet and Veggie Burger

½ cup foxtail millet soaked for ½ hour
1 tablespoon garlic minced
½ cup onion chopped fine
2 tablespoon basil chopped
½ cup zucchini grated
2 tablespoon basil chopped
1 tablespoon Cajun powder or (mix of chilli flakes and oregano)
Salt to taste
Oil to shallow fry

Directions For Healthy Millet and Veggie Burger

  • Drain the millet. Add 1 cup water and pressure cook for 2 whistles. Open the cooker after the steam is released. Fluff up the millet with a fork.
  • Grind half the quantity of the cooked millets coarsely.
  • In a large bowl transfer both the millets, and all the vegetables and mix.
  • Now season this with the spices mentioned and mix.
  • Check the seasoning.
  • Make patties according to the size of the bun. The patties should be 1 inch thick.
  • Heat a nonstick skillet or pan and shallow fry till golden on both the sides.
  • Now place a slice of cheese on the Pattie, cover and cook till the cheese melts a little.
  • Cut the bun horizontally into two, place lettuce and slice of onion on one piece.
  • Place the patties, a dollop of cold slaw, onion slice and cover with the top piece.
  • Serve with chips or fries or salad and ketchup.

Note: You can air fry the patties in a preheated air fryer by brushing the patties with oil. Other vegetables like carrot, capsicum and sweet potato can be used to make the patties.
