Ingredients for Tamatar Dhaniye Ka Shorba

6 medium tomatoes cubed
2 “piece Garlic
4 to 6 pods garlic 
1/3 cup fresh coriander stem chopped
2 tej patta (bay leaves)
2 small elaichi (green cardamom)
1 badi elaichi (black cardamom)
2 lavang (cloves)
1” dal chini (cinnamon)
1 chakra phool (star anise)
1 dry red chilli
1/2 teaspoon jeera (cumin)
1 teaspoon saunf (fennel)
1 teaspoon besan (gram flour) optional
Salt to taste
1/2 teaspoon sugar (optional)
1 teaspoon oil
1 and 1/2 cups Water (to boil soup)

Tempering
1 teaspoon ghee
1/2 teaspoon jeera
A pinch of crushed pepper
1 tablespoon coriander leaves chopped

Directions for Tamatar Dhaniye Ka Shorba

  • Heat oil in a pressure cooker, add jeera, saunf, tej patta, green cardamoms, black cardamom, cloves, cinnamon, star anise and red chillies and sauté till fragrant.
  • Add tomatoes, coriander stem, besan and saute for 1 minute.
  • Pour in 1 cup water, mix and close the lid. Pressure cook till 3 to 4 whistles.
  • Switch off the heat and wait till the pressure is released.
  • Blend in a blender and pass it through a sieve.
  • Adjust the consistency, add salt, sugar and boil it for 2 to 3 minutes.

For the tempering

  • Heat ghee in a pan, add cumin seeds and as they start to crackle add half of coriander leaves. Stir for 1 minute and then pour it on the soup. Switch off the heat.
  • Season the soup with crushed peppercorns and rest of the coriander.
  • Serve.
