Buttermilk (Masala Chaas)

Buttermilk / Chaas / Mattha / Masala Chaas are the common names by which this beverage is known in India. It is called Mor in Tamil, Mooru in Malayalam and Majjige in Kannada and Telugu.

Buttermilk was traditionally made by churning yogurt (dahi) and cold water together in a pot using a hand-held instrument called madhani. This can be consumed plain or seasoned with a variety of spices.

You may also try our Boondi Raita, Kachumber Raita and Papaya Raita made using plain curd / yogurt.

Ingredients for Buttermilk

1 cup yogurt chilled
1 cup water
½ green chilli chopped
1 teaspoon coriander chopped
¼ inch ginger chopped
6 curry leaves
¼ teaspoon mustard seeds
Salt – to taste
½ teaspoon oil

Directions for Buttermilk

  • Whisk the curd well, add water, salt and whisk again.
  • Pound the green chilli, ginger and coriander gently.
  • Add to the butter milk.
  • Heat oil in a small pan, add mustard and curry leaves. Pour on the butter milk.
  • Serve.
